SAMPLE RECIPE: Sheet Pan “Low Country Shrimp Boil”

This sheet pan shrimp dinner is inspired by a “low country boil,” which traditionally combines red potatoes, corn, and seafood, plus seafood’s favorite seasoning—Old Bay.

Preheat the oven to 400°F. In a large bowl, toss the potatoes, onions, corn, 11/2 tablespoons olive oil, and 21/2 teaspoons Old Bay. Transfer to a large sheet pan and roast for 20 minutes. Do not over- crowd the sheet pan. If needed, use two sheet pans. While the vegetables roast, rinse the shrimp and pat dry. In the same bowl, toss the shrimp in in the remaining 1/2 tablespoon oil and 11/2 tea- spoons Old Bay. After 20 minutes, remove the sheet pan from the oven. Switch the oven to broil. Add shrimp to the sheet pan. Broil for 7 minutes, until the shrimp are opaque and cooked through. Variation Tip:

If fresh corn is not in season, use frozen and thawed corn on the cob or kernels. If using frozen corn kernels, add to the sheet pan when you broil the shrimp.

INGREDIENTS: 1 ½ pounds red potatoes, quartered 2 large yellow onions, quartered 2 corn ears, cut into ½ inch pieces 2 tablespoons extra-virgin olive oil, divided 4 teaspoons Old Bay Seasoning, divided 1½ pounds 21/25 count shrimp, peeled and deveined
